Sangiovese, Syrah, Merlot
50% Sangiovese, 25% Syrah and 25% Merlot. Grapes are hand-harvested and pressed into cuve, where it ferments with wild yeasts and spends three weeks on the skins. Rested for 6 months in cuve before bottling unfined, unfiltered with no SO2.
