WINE DETAILS

From a parcel of vines over 55 years old on soils rich in clay and limestone. 3 weeks of maceration by alternating layers of whole bunch grapes and destemmed grapes. Then manual pressing and then 9 months of barrels. A dense, velvety Cabernet alive with fruit, and supple tannins. 

 

Clos des Folies - Romuald & Stephanie Sauvage

We found the wines of Clos Des Folies while on vacation at the infamous natural wine haven, Les 9 Caves. Dear friends of Francois Saint-Lo, their cellar is in the same village as Francois and the son of Stephanie & Romuald who run Clos Des Folies is working in the cellar with Francois.

Romuald & Stephanie have worked in vineyards for 23 years, beginning with Jo Pithon, Francois Poirel, and then like François a spell with Olivier Cousin. They took on this domaine in 2014 starting with just a hectare, now up to 2.5 hectares of Cabernet Franc & Grolleau, most of the vines being 60-70 years old. Everything is done by hand and no chemicals are ever used in the vineyard or the cellar. 

The wines share the same energy and vitality of those from Francois Saint-Lo, which is a big statement! Definitely worth checking out.
