I fell for Grüner in the very early days of my wine journey. The reason being, this grape can do it all…from sparkling to sweet, with many possible variations along the way. One of my favorite characteristics of this grape is how absolutely savory it can be. Chicken stock, white pepper, haricot verts, pea shoots… these are all potentials with this grape. So, naturally, we turn it up to 11 by skin fermenting it. This is all of those things, almost absurdly so, with a slice of green apple and beguiling iris flower. The name comes from one of our favorite nostalgic designs - your Grandma's crock pot! And it's everything the image elicits, from celery stock to a roast chicken. On a yurt trip, this is the crew member most likely to put on a show, instigate the late-night moshing in the yurt, send it huge over a cliff band, get inverted, generally bring the great times but occasionally just ends up being a total liability.
