Ratatuja is Carolina’s mix of many different varieties local to the area: yes, Glera, but Verduzzo, Pinot Bianco, Chardonnay, Friulano…The result takes like orange Strawburst, lemon curd, green herbs, and zesty minerals. Bone dry, plenty of cut but also pleasure.

She can be considered the unconventional and revolutionary soul of the Prosecco production area, deliberately avant-garde, out of the discipline, far from conventions, banned … like her bubbles (“Bolle Bandite” is the name of her best-known wine) – faithful to a deep sensitivity for real and authentic wine where the alliance between human and nature, the deep bond with a real world without artifice, rooted and anchored to the earth, can be felt inside every bottle.
